Amber Carol Houdek

Amber Carol Houdek, 68, of Grand Forks, ND, passed away peacefully in the comfort of her home, surrounded by her loving family, Wednesday, April 29, 2026.

Amber was born August 15, 1957, to Russell "Red" and lla (Bjerke) Eikenberry and was one of three children. She grew up in Grafton, ND, where she attended and graduated from Grafton High School. She would later move to Grand Forks where she welcomed the birth of her 2 children, Dustin and Danielle. Here she would also begin her lifelong career serving as a Certified Nurse Assistant. Amber worked as a CNA for Altru hospital until her retirement 3 years ago. In her spare time Amber enjoyed many hobbies such as horseback riding, going on walks, and traveling with friends. She especially enjoyed the time she was able to spend with her children and her 5 grandchildren.

Amber was preceded in passing by her parents Red and lla, her brother Phillip Carrico, and great granddaughter Amelia.

She is survived by her 2 children, Dustin (Melanie) Houdek, of Moorhead, MN and Danielle (Kyle) Hjelmstad, of Plymouth, MN; her 5 grandchildren, Brandon (Leslie), Riley (Trystin), Ryan, Conner and Jack She is also survived by her brother, Bruce (Kristy), of Grafton, ND; her dear friend, John Litzinger, along with many other family members and friends.

Per her wishes, the family of Amber will be holding private services to remember and celebrate her life.
